Looking for a super yum and easy meal, try this 3-cheese grilled cheese sandwich recipe! Now it’s my opinion that a GOOD grilled cheese recipe should be in everyone’s back pocket – and I love to spice up my grilled cheese sandwich by adding wasabi or chipotle mayo!
Sandwich – Ingredients
2 Slices of Gluten-Free Bread
Approx. 4-6 Spinach Leaves
1-2 Tablespoons loosely chopped Arugula (see pictures below)
Your choice of three cheeses, I recommend: 1 mild, 1 medium, and 1 intense/sharp cheese
Chipotle Mayo – Ingredients
½ Teaspoon of Black Pepper
1 Clove of Garlic
1 Green Onion
1 Teaspoon of Basil Leaves
1 ½ Teaspoons of Chili Powder (based on preference)
2 Tablespoons of Chipotle Mayo
Pinch or so of Dill Weed
Spread the mayo mixture evenly across one side of each slice of bread. Next, on one slice of bread, evenly distribute one layer of the MILD cheese. On the other bread slice, place the medium and intense cheeses (my recommendation is to not layer the cheeses, but to interchange the cheeses making one layer of both cheeses).
Next sprinkle the arugula across both slices, then place the spinach leaves over the bread that has the medium and intense cheeses. Now, you can always add some extra cheese (I recommend the mild cheese) across the top of both halves. See picture below.
**Note: The above picture (of the bread in the pan) is with non-gluten free bread. My mother wanted a grilled cheese sandwich too and this was her sandwich. Any who, place the slices open in a hot pan, allow the bread to brown and cheese to begin to melt. Once the bread browns (I recommend moving the halves in the pan in a circular motion for a nice browning and heating), then place the milder cheese half on top. Cook a bit longer until cheese is nice and melty.
Done! You should be looking at a nicely toasted sandwich with melted cheese ready for the eat’in!
