Leftover Confidential: Loaded Chili Potatoes

So over the weekend I whipped up this yummy pot of veggie chili! Now of course it was enjoyable to eat, but after a while of eating the same chili you just get bored!

Soooo what can you do with yummy leftover veggie chili – besides eat it…? Make the yummiest loaded baked potato! This is a super easy and yummy recipe that offers an option to redress your leftover chili.

Ingredients

  • 1 Idaho Potato
  • Dab of Butter
  • Old Pot of Chili 

Follow the usual instructions for baking a potato. While the potato is baking, warm up that yummy chili! When the potato is done, make a slit down the middle and fluff the potato filling.

Put a little butter on the inside, and then spoon the chili into the cooked potato, top with your favorite cheese. Place in the oven for 5-8 minutes or so at 375 degrees (or until the cheese gets all ooey gooey melty). Once done add some sour cream and yum down! πŸ˜‹πŸ½
