Alrighty, so I purchased a few eggplant about 2 days ago with no idea of what I was going to do with them. At first I was thinking I’d put together some type of yummy, healthy breakfast. But then figured I’d search the internet for inspiration. Glad I did because I stumbled upon Eating Well’sStuffed Eggplant recipe. I’ve modified this recipe by: removing the sauce, capers, and breadcrumbs, while adding onion, green peppers, Italian Seasoning, and Dill.
My recommendation when making these are to fully prep all ingredients prior to starting. Why? Because you don’t want to overcook the eggplant mixture, nor the eggplant halves due to food preparation issues. Be sure to have everything fully chopped and ready to go.
