A few weeks ago, my mom told me about an eggs baked in avocado recipe she saw on either Facebook or television. Welp, yesterday I woke up wanting some eggs and avocado (but not guacamole). I thought about grilling slices of avocado but then I was like “nahhh.” Then I remembered my momma’s recommendation and thought “why not try something new!”
For my first try it came out SOOOOOO good. I added spinach, onions, and Parmesan cheese to my recipe for some extra love.
Preheat the oven to 375 degrees. Grab an avocado, cut it in half, and remove the pit. Next, spoon a bit of the avocado out of each half as you want to be sure you will be able to fit the egg inside.
Then place some chopped spinach, onions, and Parmesan into each avocado cup. You are only placing a bit, as you want room for the egg!
Crack open an egg and remove some of the egg whites prior to placing it in the avocado half. Repeat this step for the other half. Then add salt, pepper, and garlic (if you like) on top.

Place each avocado half in the oven for 18-20 minutes. Then remove and ENJOY! You should have a nicely cooked, steamy on the inside, and soft avocado center breakfast delight!
